Executive Chef, Grandale Farm Restaurant
Grandale Farm Restaurant opened October 1, 2005 under the guidance of
Culinary Institute of America graduate, Author Clark, Jr. It specializes in catered
events, elegant dining, and dinner-lecture events. Clark supervises menu planning
and food preparation operations. He is a certified SafeServ graduate as well as
an experienced executive chef.
In addition to overseeing restaurant operations,
Clark supervises on and off-site catering service and consultant services to AR1-opt-in owners interested in expanding
the scope of their agricultural operations into the food preparation area. In conjunction with owner, Thomas Orme,
Clark is developing the “Country Cooking for Kids” program. The basics: food safety, nutrition, taste and presentation
will be emphasized, and students from 5th to 12th grades will learn the FDA basic four C’s - Cool, Clean,
Cook and don’t Cross-Contaminate. In response to customer demand, Clark will be organizing adult cooking workshops
starting with an overview of kitchen basics, mise en place and sauces.
